Trisodium phosphate, with the chemical formula Na3PO4, is an inorganic compound that contains phosphate. Sodium phosphate usually refers to sodium phosphate dodecahydrate (Na3PO4‧12H2O), but there is also anhydrous sodium phosphate, which easily dissolves in water and forms a highly alkaline solution with a pH value of 13-14.
It is commonly used in the production of water softeners, boiler cleaners, and metal rust inhibitors.
It can also be used as an additive to improve the binding force and water holding capacity of food, and is often used as a sugar juice purifier, as well as a food preservative and acidity regulator. In sauces and dessert fillings, it helps blend fat and water evenly, and in dough, it promotes expansion. In long-lasting milk, it extends shelf life. Therefore, it is used in a variety of foods, including cheese, cream, iced desserts, pre-made dough and pastry crusts, instant noodles, and beverages.
